Yum Yum: Rhubarb Crumble

So, I always run out of ideas, never know what to make my hubby for dessert and boy, does he love his desserts! So, tonight, I decided to try Rhubarb Crumble. It went down a treat! He loved it! Brownie points for me!!

Preheat the oven to 180C/350F/Gas 4. Cut the rhubarb into 7½cm/3in long sticks and place on an oven tray, sprinkle with the water and caster sugar and roast in the oven for 10 minutes. Once cooked, remove from the oven, sprinkle over the ginger and mix well. Fill an ovenproof dish about 4cm/1½in deep with the rhubarb. Rub the butter into the flour and sugar to make the crumble topping. Sprinkle over the rhubarb and bake in the oven for 35-45 minutes, or until the crumble topping is crisp and golden-brown and the rhubarb filling has softened and is bubbling. Remove and allow to cool slightly before serving with double cream.

Here’s what you need:

  • 10 sticks of rhubarb (you can get this in LuLu Hypermarket!)
  • 4 tbsp water
  • 8 tbsp caster sugar
  • 1 tsp powdered ginger
  • 4 ounces of butter
  • 4 ounces of demerara sugar (you can get this in Sultan Centre)
  • 6 ounces of flour

Chicken Curry a la Babble

So, last night’s meal went down a storm with my hubby! Chicken Curry a la Babble

Here’s what you need: (2 people serving)

2 Chicken Fillets sliced up several times

1 Tin of chopped tomatoes

1 Green Pepper

1 Red Pepper

1 Jalapeno pepper

1/2 Green chili

Button mushrooms

1 onion chopped (not finely…you want them pretty big)

Fry that all up to seal in the flavour and seal the chicken, only for a few minutes…add the tin of chopped tomatoes, salt, pepper and a pinch of turmeric, chilli powder and curry powder.1 Basil leaf.

Add: 1 Tablespoon of butter, 200ml of double cream, 500ml of water.

Let that cook on high for five, ten minutes and then simmer for one hour.

Now, I bought Pajaks Curry pPste from the Sultan Centre. It’s the only one they had and it was fine, not too hot but not too mild. 2 Tablespoons of that.

Leave for about one hour. Make your rice (don’t forget to add a chicken maggi for flavour)

I served it with melba toast and salad. It was DELICIOUS!
